The BEST Mushroom Steak Butter
5 tablespoons unsalted Irish grass fed butter (don't go cheap on the butter, you only live once)
2 cups finely diced mushroom of your choice (Shiitakes or Lions Mane work great )
1 teaspoon crushed red pepper flakes (add more or less depending on your heat tolerance)
4 cloves fresh garlic
¼ cup finely minced shallot
1 piece hickory smoked thick cut bacon chopped into small pieces
1/4 cup fresh thyme finely chopped
¼ cup finely chopped fresh rosemary
2 teaspoons salt
2 teaspoons pepper
1 tablespoon Montreal seasoning
1 tablespoon Worcestershire
2 tablespoon balsamic reduction
Steps:
In a medium pot add bacon pieces and 1 tablespoon of butter.
Cook the bacon until fully cooked and slightly crispy.
Add garlic, shallot and 2 tablespoons of butter and simmer for 3 min.
Add mushrooms and simmer for another 5 min.
Remaining at a simmer add all remaining ingredients and mix thoroughly.
With the lid on, keep on low for 15 min stirring occasionally.
Drain off 75% of the butter and add directly to your steak while on the grill on each side when they are about 5 min from being pulled from the grill.
Add mushroom/herb mixture to the steak once it's plated right before service.
